Instructions
- Preheat Oven and Prepare Pan: Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper to prevent sticking and ensure easy removal.
- Mix Crust Ingredients: In a large bowl, combine the all-purpose flour, old-fashioned oats, brown sugar, granulated sugar, salt, and the first teaspoon of ground cinnamon. Cut in the cold, cubed butter using a pastry cutter or fingers until the mixture resembles coarse crumbs. Set aside 1½ cups of this mixture for topping.
- Bake Crust: Press the remaining crumb mixture evenly into the prepared baking pan. Bake in the preheated oven for 10 to 12 minutes until it’s lightly golden and set, forming the base for the apple filling.
- Prepare Apple Filling: While the crust is baking, toss the peeled and chopped apples with cornstarch, lemon juice, vanilla extract, the remaining 1/2 teaspoon ground cinnamon, and nutmeg if using. - Assemble Bars: Spread the apple filling evenly over the baked crust. Then, sprinkle the reserved crumb mixture evenly on top to create a crunchy topping.

- Cool and Add Glaze: Remove the bars from the oven and allow them to cool completely in the pan. Once cooled, whisk powdered sugar with 1 to 2 tablespoons of milk to make a glaze and drizzle it over the bars for a sweet finish, or enjoy the bars plain.
