Instructions

  1. Activate the yeast: Mix the warm milk and granulated sugar in a small bowl. Sprinkle the active dry yeast on top and let it sit for 5 to 10 minutes until the yeast becomes foamy, indicating it is active.
  2. Make the dough: In a large mixing bowl, mash the ripe bananas thoroughly. Add the egg, melted butter, salt, and the yeast mixture to the mashed bananas. Gradually incorporate the all-purpose flour, starting with 2 ½ cups, mixing until a soft dough forms.
  3. Knead and let rise: Transfer the dough to a floured surface and knead it for about 5 minutes until it becomes smooth and elastic. Place the dough in a greased bowl, cover it with a clean cloth or plastic wrap, and let it rise in a warm place for 1 to 1.5 hours, or until it doubles in size.
  4. Prepare the filling: In a small bowl, combine the softened butter, brown sugar, and cinnamon, mixing until smooth and well blended.
