Ingredients
Scale
Dough
- 1 cup mashed ripe bananas (about 2 large bananas)
- 2 3/4 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 1/4 tsp active dry yeast
- 1/4 cup unsalted butter, melted
- 1/2 cup warm milk
- 1/2 tsp salt
- 1 large egg
Filling
- 1/2 cup brown sugar, packed
- 2 tsp ground cinnamon
- 2 tbsp unsalted butter, softened
Icing
- 1 cup powdered sugar
- 2–3 tbsp milk
Instructions
- Activate yeast: In a bowl, whisk together warm milk, yeast, and a pinch of sugar. Let the mixture sit until foamy, which should take about 5 minutes. This step ensures the yeast is active and ready to help the dough rise.
- Combine wet ingredients: Add the mashed bananas, melted butter, egg, granulated sugar, and salt to the yeast mixture. Stir thoroughly to combine these ingredients evenly, forming a cohesive liquid base for the dough.
- Form dough: Gradually mix in the flour until a smooth dough forms. Knead the dough for about 5 minutes on a lightly floured surface to develop gluten for elasticity. Cover the dough and let it rise in a warm place until doubled in size, approximately 1 hour.
- Prepare filling and roll dough: Roll the risen dough into a rectangle. Spread the softened butter evenly over the surface, then sprinkle the brown sugar and cinnamon mixture on top. Roll up the dough tightly from one edge to create a log. Slice into 9 even rolls.
- Second rise and bake: Place the cinnamon rolls into a greased baking dish. Cover and allow them to rise again for about 20 minutes. Preheat the oven to 350°F (175°C) and bake the rolls for 25 minutes or until they turn golden brown.
- Make and apply icing: While the rolls bake, whisk together powdered sugar and 2 to 3 tablespoons of milk to create a smooth icing. Drizzle the icing over the warm rolls before serving for a sweet, glossy finish.
Notes
- Use very ripe bananas for the best flavor and sweetness.
- Warm the milk to about 110°F (43°C) to activate yeast properly but avoid killing it.
- Kneading the dough is essential to develop structure; too little kneading may result in dense rolls.
- If the dough is too sticky, add a little more flour, but avoid making it too dry.
- You can store leftover cinnamon rolls in an airtight container at room temperature for 2 days or refrigerate for up to 5 days.
- Reheat the rolls gently before serving to restore softness.
