Description

Delight in these homemade Banana Bread Cinnamon Rolls, a luscious twist combining the rich flavors of ripe bananas and warm cinnamon swirls in soft, fluffy rolls. Perfect for breakfast or an indulgent snack, these rolls are glazed with a sweet powdered sugar icing that complements the spiced filling beautifully.

Ingredients

Scale

Dough

  • 1 cup mashed ripe bananas (about 2 large bananas)
  • 2 3/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 1/4 tsp active dry yeast
  • 1/4 cup unsalted butter, melted
  • 1/2 cup warm milk
  • 1/2 tsp salt
  • 1 large egg

Filling

  • 1/2 cup brown sugar, packed
  • 2 tsp ground cinnamon
  • 2 tbsp unsalted butter, softened

Icing

  • 1 cup powdered sugar
  • 23 tbsp milk

Instructions

  1. Activate yeast: In a bowl, whisk together warm milk, yeast, and a pinch of sugar. Let the mixture sit until foamy, which should take about 5 minutes. This step ensures the yeast is active and ready to help the dough rise.
  2. Combine wet ingredients: Add the mashed bananas, melted butter, egg, granulated sugar, and salt to the yeast mixture. Stir thoroughly to combine these ingredients evenly, forming a cohesive liquid base for the dough.
  3. Form dough: Gradually mix in the flour until a smooth dough forms. Knead the dough for about 5 minutes on a lightly floured surface to develop gluten for elasticity. Cover the dough and let it rise in a warm place until doubled in size, approximately 1 hour.
  4. Prepare filling and roll dough: Roll the risen dough into a rectangle. Spread the softened butter evenly over the surface, then sprinkle the brown sugar and cinnamon mixture on top. Roll up the dough tightly from one edge to create a log. Slice into 9 even rolls.
  5. Second rise and bake: Place the cinnamon rolls into a greased baking dish. Cover and allow them to rise again for about 20 minutes. Preheat the oven to 350°F (175°C) and bake the rolls for 25 minutes or until they turn golden brown.
  6. Make and apply icing: While the rolls bake, whisk together powdered sugar and 2 to 3 tablespoons of milk to create a smooth icing. Drizzle the icing over the warm rolls before serving for a sweet, glossy finish.

Notes

  • Use very ripe bananas for the best flavor and sweetness.
  • Warm the milk to about 110°F (43°C) to activate yeast properly but avoid killing it.
  • Kneading the dough is essential to develop structure; too little kneading may result in dense rolls.
  • If the dough is too sticky, add a little more flour, but avoid making it too dry.
  • You can store leftover cinnamon rolls in an airtight container at room temperature for 2 days or refrigerate for up to 5 days.
  • Reheat the rolls gently before serving to restore softness.
