  • ½ cup shredded cheddar cheese
  • ¼ cup red onion, diced (optional)
  • 1 tbsp fresh parsley or chives, chopped
  • 1 tsp red pepper flakes (optional, for heat)
  • Salt & black pepper, to taste

Instructions

  1. Preheat Oven: Heat your oven to 400°F (200°C). Line a pizza pan or baking sheet with parchment paper to prevent sticking.
  2. Make Cheese Crust: Evenly spread 2 cups shredded mozzarella and 1 cup shredded cheddar cheese on the prepared pan, forming a large circle roughly 10 to 12 inches in diameter. This will serve as your pizza crust.
  3. Bake Cheese Base: Place the pan in the oven and bake for 8 to 10 minutes until the cheese has melted, became bubbly, and turned lightly golden. Remove the crust from the oven carefully.
  4. Add Toppings: Crack the 4 eggs evenly spaced on top of the cheese crust. Sprinkle the cooked and crumbled breakfast sausage, diced red onion (if using), and the additional 1 cup mozzarella and ½ cup cheddar cheese over the eggs. Season with salt, black pepper, and red pepper flakes if you like some heat.
  5. Bake Again: Return the pizza to the oven and bake for another 10 to 12 minutes or until the eggs are set to your preferred doneness and the cheeses on top have melted beautifully.
