Instructions
- Preheat Oven: Heat your oven to 400°F (200°C) and line a pizza pan or baking sheet with parchment paper to prepare for an easy cleanup and prevent sticking.
- Make Cheese Crust: Evenly spread 2 cups of mozzarella cheese and 1 cup of cheddar cheese on the lined pan in a large circular shape about 10–12 inches in diameter, which will form your crispy cheese crust once baked.
- Bake: Place the cheese crust in the preheated oven and bake for 8–10 minutes until the cheese has melted, is bubbly, and has turned lightly golden. Remove from the oven carefully to prepare for toppings.
- Add Toppings: Crack the 4 large eggs evenly across the surface of the warm cheese crust. Sprinkle the cooked and crumbled breakfast sausage, diced red onion if using, and the extra 1 cup mozzarella plus ½ cup cheddar cheese on top. Season with salt, black pepper, and red pepper flakes for added heat if desired.
- Bake Again: Return the assembled pizza to the oven and bake for an additional 10–12 minutes, or until the eggs are set to your preferred doneness and the additional cheese has melted beautifully.
- Garnish & Serve: Once out of the oven, sprinkle freshly chopped parsley or chives over the pizza for color and freshness. Slice into portions and serve while hot for a satisfying breakfast experience.
