These Cinnamon Roll Bliss Bars combine the comforting flavors of cinnamon rolls into an easy-to-make bar form. Featuring a tender, buttery base swirled with a cinnamon-sugar mixture and topped with a luscious cream cheese frosting, these bars are perfect for breakfast, dessert, or a sweet snack any time of day.

Ingredients

Scale

Base Batter

  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1½ cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup milk

Cinnamon Filling

  • ½ cup brown sugar, packed
  • 2 tablespoon ground cinnamon
  • ¼ cup unsalted butter, melted

Cream Cheese Frosting

  • 4 ounce cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 1½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 23 tablespoon milk

Instructions

  1. Prepare the Oven and Pan: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan to prevent sticking.
  2. Make the Base Batter: In a large bowl, beat ½ cup of softened butter with the granulated sugar until the mixture is light and fluffy. Add in the eggs and vanilla extract, mixing well to combine. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mixing until just combined. Spread half of this batter evenly into the prepared pan.
  3. Prepare the Cinnamon Filling and Assemble: In a small bowl, combine the brown sugar and ground cinnamon. Stir in the melted butter until the mixture is well blended. Drop spoonfuls of the cinnamon mixture evenly over the base batter in the pan. Then, spread the remaining batter on top. Use a knife to swirl the cinnamon filling through the batter to create a marbled effect.
  4. Bake the Bars: Place the pan in the oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Once baked, allow the bars to cool completely on a wire rack.
  5. Prepare the Cream Cheese Frosting: In a large bowl, beat the softened cream cheese and ¼ cup softened butter together until smooth and creamy. Add the powdered sugar and vanilla extract, mixing until well combined. Gradually add milk, one tablespoon at a time, until the frosting becomes spreadable.
  6. Frost and Serve: Spread the cream cheese frosting evenly over the cooled Cinnamon Roll Bliss Bars. Cut into squares and serve.

Notes

  • Ensure the bars are completely cooled before frosting to prevent the frosting from melting.
  • For a stronger cinnamon flavor, you can increase the ground cinnamon in the filling to 3 tablespoons.
  • Store any leftover bars covered in the refrigerator for up to 3 days.
  • These bars can be warmed slightly before serving for an extra gooey treat.
