Ingredients
Scale
Blondie Batter
- 1 cup butter, melted
- 1 1/2 cups brown sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 tsp salt
Cinnamon Swirl
- 1/2 cup brown sugar
- 1 tbsp cinnamon
- 1/4 cup butter, melted
Icing
- 4 oz cream cheese, softened
- 1 cup powdered sugar
- 1–2 tbsp milk
- 1/2 tsp vanilla extract
Instructions
- Preheat and prepare pan: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper for easy removal.
- Make the blondie batter: In a large bowl, combine melted butter and 1 1/2 cups brown sugar until smooth. Beat in eggs and vanilla extract until fully incorporated. Gently fold in the flour and salt, mixing just until combined to avoid overworking the batter.
- Prepare cinnamon swirl: In a separate bowl, mix together 1/2 cup brown sugar, cinnamon, and melted butter until the mixture resembles wet sand.
- Assemble the blondies: Spread the blondie batter evenly in the prepared baking dish. Drop spoonfuls of the cinnamon swirl mixture over the batter’s surface. Use a butter knife to gently swirl the cinnamon mixture throughout the blondie batter to create a marbled effect.
- Bake: Place in the oven and bake for 25–30 minutes, or until the edges turn golden and a toothpick inserted near the center comes out mostly clean with a few moist crumbs.
- Cool completely: Remove from the oven and allow the blondies to cool fully in the pan before adding icing.
- Make the icing: Beat softened cream cheese until smooth. Gradually add powdered sugar, milk, and vanilla extract, mixing until creamy and smooth.
- Ice the blondies: Drizzle or spread the cream cheese icing evenly over the cooled blondies. Slice and serve.
Notes
- For a stronger cinnamon flavor, increase the cinnamon in the swirl to 1 1/2 tablespoons.
- Make sure the blondies are completely cool before icing to prevent the icing from melting.
- You can substitute milk with almond or oat milk for a dairy-free option in the icing.
- Store blondies in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
- For easy slicing, chill the blondies after icing for at least 30 minutes.
