Description

Cinnamon Roll Blondies are a delightful twist on classic blondies, featuring a rich, buttery base swirled with a cinnamon sugar mixture and topped with a creamy cream cheese icing. This recipe combines the comforting flavors of cinnamon rolls with the easy, portable form of blondies, perfect for dessert or a sweet snack.

Ingredients

Scale

Blondie Batter

  • 1 cup butter, melted
  • 1 1/2 cups brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp salt

Cinnamon Swirl

  • 1/2 cup brown sugar
  • 1 tbsp cinnamon
  • 1/4 cup butter, melted

Icing

  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 12 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper for easy removal.
  2. Make the blondie batter: In a large bowl, combine melted butter and 1 1/2 cups brown sugar until smooth. Beat in eggs and vanilla extract until fully incorporated. Gently fold in the flour and salt, mixing just until combined to avoid overworking the batter.
  3. Prepare cinnamon swirl: In a separate bowl, mix together 1/2 cup brown sugar, cinnamon, and melted butter until the mixture resembles wet sand.
  4. Assemble the blondies: Spread the blondie batter evenly in the prepared baking dish. Drop spoonfuls of the cinnamon swirl mixture over the batter’s surface. Use a butter knife to gently swirl the cinnamon mixture throughout the blondie batter to create a marbled effect.
  5. Bake: Place in the oven and bake for 25–30 minutes, or until the edges turn golden and a toothpick inserted near the center comes out mostly clean with a few moist crumbs.
  6. Cool completely: Remove from the oven and allow the blondies to cool fully in the pan before adding icing.
  7. Make the icing: Beat softened cream cheese until smooth. Gradually add powdered sugar, milk, and vanilla extract, mixing until creamy and smooth.
  8. Ice the blondies: Drizzle or spread the cream cheese icing evenly over the cooled blondies. Slice and serve.

Notes

  • For a stronger cinnamon flavor, increase the cinnamon in the swirl to 1 1/2 tablespoons.
  • Make sure the blondies are completely cool before icing to prevent the icing from melting.
  • You can substitute milk with almond or oat milk for a dairy-free option in the icing.
  • Store blondies in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
  • For easy slicing, chill the blondies after icing for at least 30 minutes.
