Ingredients
Scale
Chicken
- 1 lb chicken breast, cut into bite-sized pieces
Vegetables
- 8 oz mushrooms, sliced
- 1 medium onion, diced
Liquids & Dairy
- 2 cups chicken broth
- 1 cup sour cream
Dry Ingredients & Seasonings
- 3 tbsp flour
- 1 tsp garlic powder
- Salt, to taste
- Pepper, to taste
Oils & Garnish
- 2 tbsp olive oil
- Fresh parsley, optional
Instructions
- Cook the Chicken: Heat 2 tablespoons of olive oil over medium heat in a large skillet. Add the chicken pieces, season with salt and pepper, and sauté for about 5-7 minutes until golden brown. Remove the chicken and set aside.
- Sauté Vegetables: In the same skillet, add the diced onion and sliced mushrooms. Cook over medium heat for 5-6 minutes until the onions are translucent and mushrooms are browned.
- Add Flour: Sprinkle 3 tablespoons of flour over the cooked vegetables. Stir well to combine and cook for an additional 1-2 minutes to remove the raw flour taste.
- Create the Sauce: Gradually pour in 2 cups of chicken broth while stirring continuously. Cook for 3-4 minutes until the sauce thickens slightly.
- Add Sour Cream and Garlic Powder: Reduce heat to low and stir in 1 cup of sour cream and 1 teaspoon of garlic powder. Mix thoroughly to form a creamy sauce.
- Combine Chicken and Sauce: Return the cooked chicken to the skillet and stir to coat all pieces evenly with the sauce. Heat through for an additional 2-3 minutes until everything is warmed.
- Serve: Serve the creamy chicken stroganoff over mashed potatoes or egg noodles. Garnish with fresh parsley if desired for added color and flavor.
