Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prepare for roasting the potatoes.
- Prepare the potatoes: In a large bowl, halve the baby potatoes and toss them with olive oil, salt, and black pepper until evenly coated. Spread the potatoes out in a single layer on the lined baking sheet.
- Roast the potatoes: Place the baking sheet in the oven and roast the potatoes for 25-30 minutes until they are tender and golden brown. Flip them halfway through the cooking time to ensure even roasting.
- Make the garlic sauce: While the potatoes are roasting, melt the butter in a skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant without browning.
- Add cream and cheese: Pour in the heavy cream and let it simmer gently for 3-4 minutes until the sauce slightly thickens. Stir in the grated Parmesan cheese and continue stirring until the cheese is fully melted and the sauce is creamy.
- Combine and serve: Once the potatoes are roasted, transfer them to a serving dish. Pour the creamy garlic sauce over the potatoes and gently toss to coat. Garnish with chopped fresh parsley before serving.
