  • Author: Victor
  • Total Time: 30 minutes
  • Yield: 8 taquitos 1x

Description

Crispy Chicken Taquitos are a delicious and easy-to-make Mexican-inspired snack or meal made with shredded chicken, creamy cheese, and spices rolled in tortillas and baked until golden and crunchy. Served with sour cream, guacamole, and fresh cilantro, these taquitos offer a satisfying blend of creamy, savory, and spicy flavors perfect for any occasion.

Ingredients

Scale

Filling

  • 2 cups cooked shredded chicken (rotisserie chicken works great)
  • 4 oz cream cheese, softened
  • ½ cup shredded cheddar or Mexican blend cheese
  • ¼ cup salsa (mild or spicy)
  • ½ tsp garlic powder
  • ½ tsp chili powder
  • ½ tsp cumin
  • Salt and black pepper to taste

Tortillas

  • 8 small flour or corn tortillas

For Baking

  • Cooking spray or oil (for brushing)

Garnishes and Serving

  • Chopped cilantro
  • Sour cream
  • Guacamole
  • Extra shredded cheese

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it to prevent the taquitos from sticking.
  2. Make Filling: In a large bowl, combine the cooked shredded chicken, softened cream cheese, shredded cheddar or Mexican blend cheese, salsa, garlic powder, chili powder, cumin, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.
  3. Warm Tortillas: Microwave the tortillas for about 20 seconds to soften them and make rolling easier without cracking.
  4. Assemble Taquitos: Spoon 2 to 3 tablespoons of the filling onto one side of each tortilla. Roll the tortillas tightly around the filling to form taquitos.
  5. Arrange on Baking Sheet: Place the rolled taquitos seam-side down on the prepared baking sheet to prevent them from unrolling during baking.
  6. Brush or Spray: Lightly brush the taquitos with oil or spray them with cooking spray to enhance browning and crispiness.
  7. Bake: Bake the taquitos in the preheated oven for 15 to 20 minutes, or until they turn golden brown and crispy. For a more crisp finish, broil for an additional 1 to 2 minutes at the end, watching carefully to avoid burning.
  8. Serve: Serve the crispy chicken taquitos warm, garnished with chopped cilantro, sour cream, guacamole, and extra shredded cheese as desired for a delicious and flavorful meal or snack.

Notes

  • You can substitute cooked shredded chicken with cooked ground chicken or turkey if preferred.
  • For extra spice, add diced jalapeños or hot sauce to the filling mix.
  • Using corn tortillas offers a gluten-free option, but ensure the tortillas are fresh to prevent cracking.
  • These taquitos can be reheated in the oven or air fryer to maintain crispiness.
  • Leftover taquitos can be stored in an airtight container in the refrigerator for up to 3 days.
