  • Yield: 4 servings 1x

Description

This Loaded Steak and Potato Bake is a hearty, comforting dish perfect for slow-cooked meals. Tender chunks of beef steak and diced potatoes are layered with crispy bacon, melted cheddar cheese, and a creamy garlic sour cream sauce, then cooked low and slow in a crockpot until perfectly tender and flavorful. Finished with fresh green onions, this casserole-style bake is ideal for cozy family dinners or meal prepping.

Ingredients

Scale

Meat and Vegetables

  • 450 g beef steak, cubed
  • 800 g potatoes, peeled and diced
  • 100 g bacon bits
  • 2 green onions, sliced

Dairy

  • 200 g cheddar cheese, shredded
  • 100 ml sour cream
  • 50 ml milk

Other

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preparation: Start by peeling and dicing the potatoes into bite-sized pieces. Cube the beef steak into similar bite-size chunks for even cooking.
  2. Brown the Steak: Heat the olive oil in a skillet over medium heat. Add the cubed steak and cook, stirring occasionally, until all sides are browned and sealed to lock in juices.
  3. Layer Ingredients in Crockpot: In the crockpot, begin by layering half of the diced potatoes at the bottom, then add half of the browned steak, followed by half of the bacon bits and a generous sprinkle of shredded cheddar cheese.
  4. Repeat Layers: Repeat the layering with the remaining potatoes, steak, bacon bits, and cheddar cheese to build the casserole.
  5. Mix the Cream Sauce: In a small bowl, combine the sour cream, milk, minced garlic, salt, and black pepper thoroughly, creating a creamy, seasoned sauce.
  6. Add Sauce to Crockpot: Pour the sour cream mixture evenly over the layered ingredients in the crockpot, allowing it to seep down and coat the potatoes and steak.
  7. Cook Low and Slow: Cover the crockpot with its lid and set to cook on low for 6-7 hours or on high for 3-4 hours until the potatoes are fork-tender and the flavors meld beautifully.
  8. Check for Doneness: Around the end of cooking, check the potatoes by piercing a piece with a fork – it should easily slide through without resistance.
  9. Garnish: Once fully cooked, uncover the crockpot and sprinkle the sliced green onions on top for a fresh, mild onion flavor and a pop of color.
  10. Serve Warm: Serve the loaded steak and potato bake warm directly from the crockpot as a main dish, perfect for comfort food cravings.

Notes

  • For extra crispy bacon, you may cook the bacon bits separately in a pan before layering.
  • Feel free to substitute cheddar cheese with a cheese blend or your favorite cheese for variation.
  • If using a different slow cooker size, adjust ingredient portions accordingly.
  • This recipe is great for preparing ahead; simply assemble and refrigerate, then cook when ready.
  • To make it spicier, add a pinch of chili flakes to the sour cream mixture.
