Ingredients
Scale
Garlic Butter Steak Bites
- 1 lb (450g) sirloin or ribeye steak, cut into bite-sized cubes
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 3 tablespoons unsalted butter
- Salt and pepper to taste
- Optional: chopped fresh parsley for garnish
Parmesan Cream Sauce
- 1 tablespoon unsalted butter
- 2 cloves garlic, finely minced
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- Salt and black pepper to taste
- Optional: pinch of red pepper flakes for a little heat
Instructions
- Prep the steak: Pat your steak cubes dry with paper towels to remove excess moisture and season generously with salt and pepper on all sides to enhance flavor.
- Sear the steak bites: Heat the olive oil in a large skillet over medium-high heat. Add the steak cubes in batches to avoid overcrowding, and sear each batch for 2 to 3 minutes per side until browned and caramelized. Remove the cooked steak bites from the pan and set them aside.
- Make the garlic butter: Reduce the heat to medium in the same skillet. Melt the 3 tablespoons of unsalted butter, then add the minced garlic and sauté for about 30 seconds until fragrant but not browned. Return the seared steak bites to the skillet and toss well to coat them in the garlic butter. Remove from heat once coated.
- Prepare the Parmesan cream sauce: In a separate saucepan, melt 1 tablespoon of unsalted butter over medium heat. Add the finely minced garlic and sauté for 30 seconds until fragrant. Pour in 1 cup of heavy cream and bring the mixture to a gentle simmer. Stir in ½ cup of freshly grated Parmesan cheese and whisk continuously until the sauce is smooth and has thickened slightly, about 3 to 5 minutes. Season with salt, black pepper, and, if desired, a pinch of red pepper flakes for heat.
- Combine and serve: Pour the warm Parmesan cream sauce over the garlic butter steak bites or serve it on the side. Garnish with chopped fresh parsley if desired. Enjoy this dish over your favorite pasta, creamy mashed potatoes, or roasted vegetables for a satisfying meal.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- When reheating, warm gently on the stove with a splash of cream or milk to loosen the sauce and prevent curdling.
- For a lighter sauce, substitute heavy cream with half-and-half.
- Use freshly grated Parmesan cheese for a smooth sauce as pre-shredded varieties can lead to clumping.
- For a dairy-free version, swap in plant-based cream and vegan cheese, or use coconut cream as an alternative.
