Ingredients

Scale

Cake

  • 1/2 cup butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 2/3 cup egg nog
  • 1/4 cup sour cream

Crumb Topping

  • 1/2 cup butter, softened
  • 3/4 cup brown sugar, packed
  • 1 cup all-purpose flour
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg

Glaze

  • 3/4 cup powdered sugar
  • 45 tbsp egg nog
  • Pinch ground cinnamon
  • Pinch ground nutmeg

Instructions

  1. Prepare the Cake Batter: Preheat your oven to 350°F (175°C). Lightly spray a 9×9 inch baking pan with non-stick spray and set aside. In a medium bowl, cream together the softened butter, granulated sugar, and brown sugar using a handheld mixer, stand mixer, or by hand until the mixture is smooth and creamy. Add the egg and vanilla extract, mixing well to combine.
  2. Mix Dry Ingredients: In the same bowl, add the all-purpose flour, salt, and baking powder. Mix until just combined; the mixture may seem crumbly, which is normal at this stage.
  3. Add Wet Ingredients: Pour in the egg nog and sour cream simultaneously into the dry mixture. Mix until a smooth cake batter forms. Pour the batter evenly into the prepared 9×9 inch baking pan.
  4. Make the Crumb Topping: In another medium bowl, combine softened butter, brown sugar, all-purpose flour, ground cinnamon, and ground nutmeg. Cut the butter into the dry ingredients using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Be careful not to overmix to avoid forming a paste.
  5. Assemble the Cake: Evenly sprinkle the crumb topping over the cake batter in the baking pan, creating a thick layer to provide a delightful texture contrast.
  6. Bake the Cake: Place the pan in the preheated oven and bake for 40-45 minutes. Check doneness by inserting a toothpick near the center; it should come out clean when the cake is fully baked.
  7. Prepare the Glaze: While the cake cools, whisk together the powdered sugar, egg nog, pinch of cinnamon, and pinch of nutmeg in a small bowl until smooth and pourable.
  8. Glaze and Serve: Drizzle the prepared glaze over the cooled cake evenly. Allow the glaze to set slightly before slicing and serving. Enjoy your festive and flavorful Eggnog Coffee Cake!

  • Cake can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
  • Ensure the cake is completely cooled before glazing to prevent the glaze from melting.
  • For a more intense spice flavor, feel free to add a dash of cloves or allspice to the crumb topping or glaze.
