Firecracker Sauce
- 1/2 cup buffalo sauce
- 2 tbsp coconut aminos
- 3 tbsp coconut sugar
- 2 tsp rice vinegar
- 1 tsp ginger powder
- 2 tsp garlic powder
- Salt and black pepper to taste (omit pepper for AIP)
Main Ingredients
- 2 tbsp avocado oil
- 1 cup broccoli florets
- Salt and pepper to taste
- 1 lb ground chicken
- 2 tbsp green onion, sliced
- 3 cups cauliflower rice (cooked) or steamed rice
Instructions
- Prepare the Firecracker Sauce: In a bowl, combine buffalo sauce, coconut aminos, coconut sugar, rice vinegar, ginger powder, garlic powder, salt, and black pepper. Stir thoroughly to blend all the flavors well. Adjust seasoning to taste.
- Sauté the Broccoli: Heat avocado oil in a large pan over medium heat. When the oil is shimmering, add the broccoli florets. Sauté for 5-7 minutes until they are lightly crisp but tender. Season with salt and pepper to taste, then remove from the pan and set aside.
- Cook the Ground Chicken: In the same pan, add the ground chicken. Season lightly with salt and pepper, then crumble and cook until fully browned and no longer pink, stirring occasionally to break up the meat evenly.
- Combine Ingredients with Sauce: Return the cooked broccoli to the pan, pour in the prepared firecracker sauce, and stir everything to ensure the sauce coats both the chicken and broccoli evenly. Cook for an additional 1-2 minutes to meld the flavors.
- Assemble the Bowls: Serve the chicken and broccoli mixture over cooked cauliflower rice or steamed rice. Garnish the top with sliced green onions for a fresh finish and serve immediately.
Notes
- For an AIP (Autoimmune Protocol) compliant version, omit black pepper from the firecracker sauce and seasoning.
- You can substitute ground turkey or lean ground beef in place of chicken if preferred.
- Cauliflower rice keeps this dish low-carb, but steamed white or brown rice works well for higher carb needs.
- Adjust the amount of buffalo sauce according to your preferred spice level.
