  • 34 garlic cloves, minced
  • 2 tsp onion powder
  • 2 tsp mixed herbs
  • 1 tsp chili flakes
  • 2 tsp paprika
  • 1 tsp salt

Crispy Potatoes

  • 800g uncooked potatoes, cubed
  • 1 tsp salt
  • Garlic powder, to taste
  • Mixed herbs, to taste
  • Chili flakes, to taste
  • Paprika, to taste
  • Optional: Olive oil or cooking spray

Creamy Garlic Parmesan Sauce

  • 120ml milk (any type)
  • 100g light cream cheese (Philadelphia Lightest)
  • 40g grated Parmesan cheese
  • Extra seasoning: salt, garlic, mixed herbs to taste
  • 50g shredded mozzarella (or any low-fat cheese)
  • Fresh parsley for garnish

Instructions

  1. Cook the Potatoes: Preheat your air fryer to 200°C (400°F) or your oven to 200°C (400°F). Toss the cubed potatoes with salt, garlic powder, mixed herbs, chili flakes, paprika, and optionally a little olive oil or cooking spray. Air fry the potatoes for 18-20 minutes or bake them in the oven for 20-23 minutes, until golden and crispy.
  2. Cook the Chicken: While the potatoes cook, heat 2 tsp olive oil in a skillet over medium heat. Add the cubed chicken breast seasoned with minced garlic, onion powder, mixed herbs, chili flakes, paprika, and salt. Sauté the chicken for 5-6 minutes or until fully cooked and slightly golden.
  3. Make it Creamy: Lower the heat to medium-low and add 120ml milk and 100g light cream cheese to the skillet with the cooked chicken. Stir continuously until the cream cheese melts completely and the sauce becomes smooth and creamy. Season with extra salt, garlic, and mixed herbs to taste.
  4. Combine and Melt Cheese: Fold in the crispy potatoes gently to coat with the creamy sauce. Sprinkle 50g shredded mozzarella evenly over the mixture. Cover the skillet and let it sit on low heat for 4-5 minutes, allowing the cheese to melt thoroughly, creating a gooey finish.
