Description

Delicious homemade Cosmic Brownies featuring a rich, fudgy chocolate base topped with a smooth chocolate ganache and colorful rainbow sprinkles, perfect for a decadent treat or celebration.

Ingredients

Scale

Brownies

  • 10 tbsp unsalted butter
  • 4 oz semisweet chocolate, chopped
  • 3/4 cup (150g) light brown sugar, packed
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3/4 cup (95g) all purpose flour
  • 1/4 cup (20g) unsweetened cocoa powder
  • 1/4 tsp salt

Ganache

  • 3/4 cup (120g) semisweet chocolate chips
  • 1/4 cup (60ml) heavy whipping cream
  • Rainbow coated chocolate sprinkles

Instructions

  1. Prepare the Pan: Preheat the oven to 350°F (175°C). Grease and line an 8×8 inch square baking dish with parchment paper, letting the paper overhang the edges for easy removal.
  2. Melt Butter and Chocolate: In a heat-safe bowl, melt the unsalted butter and chopped semisweet chocolate in the microwave in 30-second intervals, stirring between each, until smooth and fully melted (about 90 seconds total).
  3. Mix Sugars and Eggs: In a large mixing bowl, vigorously whisk together the brown sugar, granulated sugar, and eggs until the mixture is pale and creamy, about 1 to 2 minutes. Then add the vanilla extract and mix to combine.
  4. Combine Chocolate Mixture: Slowly pour the melted chocolate and butter mixture into the sugar and egg mixture while continuously whisking until fully incorporated.
  5. Add Dry Ingredients: Using a rubber spatula, fold in the all-purpose flour, cocoa powder, and salt just until combined. Be careful not to overmix to maintain the fudgy texture.
  6. Bake the Brownies: Pour the batter evenly into the prepared baking dish. Bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted comes out with moist crumbs.
  7. Cool Brownies: Let the brownies cool in the pan for 30 minutes at room temperature. Then transfer them to the refrigerator to chill completely for 1 to 2 hours.
  8. Prepare Ganache: Place the semisweet chocolate chips in a small mixing bowl. Heat the heavy cream in a microwave-safe dish until it is hot and bubbling, about 1 minute.
  9. Combine Ganache Ingredients: Pour the hot cream over the chocolate chips, let it sit for 30 seconds, then whisk until smooth and glossy.
  10. Apply Ganache and Sprinkles: Pour the ganache over the chilled brownies and spread evenly. Immediately sprinkle rainbow coated chocolate sprinkles on top.
  11. Set Ganache: Refrigerate the brownies again for 30 minutes to 1 hour, or until the ganache is completely set.
  12. Serve: Use the parchment paper overhang to lift the brownies from the pan. Slice into squares and enjoy your homemade Cosmic Brownies!

Notes

  • For fudgier brownies, avoid overbaking; check with a toothpick early.
  • Allow brownies to fully chill before applying ganache for best results.
  • Use parchment paper to easily lift brownies from the pan without breakage.
  • You can substitute semisweet chocolate chips with dark or milk chocolate based on preference.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
