Ingredients
Scale
Potato Dough
- 2 cups (about 1 pound) mashed potatoes (cooled)
- 1 cup all-purpose flour (plus more for dusting)
- 1/4 teaspoon salt
- 2 tablespoons butter (melted)
Instructions
- Combine Ingredients: In a large bowl, mix the cooled mashed potatoes, all-purpose flour, salt, and melted butter until a soft dough forms.
- Knead Dough: Lightly flour a work surface and turn the dough out. Gently knead until smooth, being careful not to overwork the dough to keep it tender.
- Roll and Shape: Roll the dough into a circle about 1/4 inch thick on the floured surface.
- Cut into Farls: Cut the rolled dough circle into four equal quarters, known as farls.
- Preheat Skillet: Heat a non-stick skillet or griddle over medium heat; no oil is needed for cooking.
- Cook Farls: Place each farl in the hot skillet and cook for 3–4 minutes on each side until they turn golden brown and develop a slightly crisp outside texture.
- Serve Warm: Enjoy the farls warm, ideally with butter, eggs, or your favorite breakfast sides.
Notes
- Use cooled mashed potatoes to prevent the dough from being too sticky.
- Additional flour may be needed to dust the surface to avoid sticking.
- Do not over-knead the dough to keep the farls tender inside.
- Serve immediately for best texture, though leftovers can be reheated on a skillet.
- Can be enjoyed with butter, jams, eggs, or as part of a traditional Ulster Fry.
