Irish Potato Farls Recipe

  • Author: Victor
  • Total Time: 20 minutes
  • Yield: 4 servings 1x
  • Diet: Vegetarian

Description

Irish Potato Farls are a traditional Irish potato bread made from mashed potatoes, flour, and butter. Shaped into quarters and pan-fried until golden and slightly crisp, these farls are soft and fluffy inside, making them a comforting accompaniment to breakfast or any meal. Rooted in Irish culinary history, they showcase resourceful and hearty home cooking.

Ingredients

Scale

Potato Dough

  • 2 cups (about 1 pound) mashed potatoes (cooled)
  • 1 cup all-purpose flour (plus more for dusting)
  • 1/4 teaspoon salt
  • 2 tablespoons butter (melted)

Instructions

  1. Combine Ingredients: In a large bowl, mix the cooled mashed potatoes, all-purpose flour, salt, and melted butter until a soft dough forms.
  2. Knead Dough: Lightly flour a work surface and turn the dough out. Gently knead until smooth, being careful not to overwork the dough to keep it tender.
  3. Roll and Shape: Roll the dough into a circle about 1/4 inch thick on the floured surface.
  4. Cut into Farls: Cut the rolled dough circle into four equal quarters, known as farls.
  5. Preheat Skillet: Heat a non-stick skillet or griddle over medium heat; no oil is needed for cooking.
  6. Cook Farls: Place each farl in the hot skillet and cook for 3–4 minutes on each side until they turn golden brown and develop a slightly crisp outside texture.
  7. Serve Warm: Enjoy the farls warm, ideally with butter, eggs, or your favorite breakfast sides.

Notes

  • Use cooled mashed potatoes to prevent the dough from being too sticky.
  • Additional flour may be needed to dust the surface to avoid sticking.
  • Do not over-knead the dough to keep the farls tender inside.
  • Serve immediately for best texture, though leftovers can be reheated on a skillet.
  • Can be enjoyed with butter, jams, eggs, or as part of a traditional Ulster Fry.
