Instructions
- Sauté Aromatics: In a large pot over medium heat, heat a drizzle of olive oil. Add diced onion and cook until translucent, about 5 minutes. Then add minced garlic and cook for another minute until fragrant.
- Brown Meat: Add the ground beef and Italian sausage to the pot, cooking and crumbling the meat with a spoon until fully browned and no longer pink, approximately 7-10 minutes. Drain excess fat if necessary.
- Add Liquids and Herbs: Stir in the crushed tomatoes, chicken broth, dried oregano, and chopped fresh basil. Season with salt and pepper to taste. Bring the mixture to a simmer.
- Cook Pasta: Once the soup base is simmering, add the small pasta to the pot. Cook according to the package instructions until the pasta is al dente, usually about 8-10 minutes, stirring occasionally to prevent sticking.
- Finish with Cheese: Reduce the heat to low. Gently stir in the ricotta cheese until well incorporated and creamy. Before serving, top each bowl with shredded mozzarella cheese to melt and add richness.
