Description
These No Bake Baileys Irish Cream Cookie Balls are a delightful, easy-to-make treat combining the rich flavors of vanilla wafer crumbs and Baileys Irish Cream, coated in a smooth candy melt shell. Perfect for holiday parties, gift-giving, or a quick indulgent dessert without the need for baking.
Ingredients
Scale
Cookie Ball Mixture
- 3 cups vanilla wafer crumbs
- 1 cup powdered sugar (115g)
- 1/3 cup corn syrup (80ml)
- 1/3 cup Baileys Irish Cream (80ml)
Coating
- 12 oz candy melts
Instructions
- Combine Dry Ingredients: In a large bowl, mix the vanilla wafer crumbs and powdered sugar until evenly combined.
- Add Wet Ingredients: Stir in the corn syrup and Baileys Irish Cream, mixing well. The mixture will appear crumbly at this stage.
- Form Balls: Take about 1 tablespoon of the mixture and shape it into balls using your fingertips. If the dough becomes sticky, dust your fingertips with powdered sugar to help handle the mixture. Set the formed balls aside on a clean surface or plate.
- Melt Candy Coating: Place the candy melts in a microwave-safe bowl and melt them in short increments of 15 to 45 seconds, stirring between each until smooth and fully melted.
- Dip and Set: Using a fork or toothpick, dip each cookie ball into the melted candy melts, ensuring full coverage. Place the dipped balls on parchment paper and allow them to dry completely before serving.
Notes
- If the mixture is too sticky to handle, chilling it for 30 minutes can help firm it up.
- Use parchment paper to prevent the cookie balls from sticking as they set.
- Store cookie balls in an airtight container at room temperature for up to one week or refrigerate for longer freshness.
- For a festive touch, sprinkle colored sugar or edible glitter on the candy coating before it dries.
