Ingredients
Scale
Brownie Base
- 1 (18.3-ounce) box fudge brownie mix (plus ingredients listed on the box)
Peppermint Frosting
- 2½ cups powdered sugar
- ½ cup unsalted butter, softened
- 2–3 tablespoons heavy whipping cream
- 1 teaspoon peppermint extract
Chocolate Ganache Topping
- 1 cup unsalted butter, softened (divided: ½ cup for frosting, ½ cup for ganache)
- 1½ cups mini chocolate chips
Garnish
- Crushed candy canes
Instructions
- Preheat and Prepare: Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper to prevent sticking and for easy removal of the brownies.
- Make Brownies: Prepare the fudge brownies according to the directions on the box, following all ingredient and mixing instructions. Pour the batter evenly into the prepared pan and bake for 20 to 25 minutes, until a toothpick inserted in the center comes out with a few moist crumbs but no wet batter.
- Prepare Peppermint Frosting: While the brownies cool completely in the pan, beat together the powdered sugar, ½ cup softened butter, 2 to 3 tablespoons heavy whipping cream, and peppermint extract in a large mixing bowl until smooth and creamy. Adjust cream for desired spreading consistency.
- Frost Brownies: Once the brownies are fully cooled, spread the peppermint frosting evenly over the surface. Place the pan in the refrigerator and chill for 30 minutes to set the frosting.
- Make Chocolate Ganache: In a small saucepan over low heat, melt the mini chocolate chips together with the remaining ½ cup softened butter, stirring constantly to avoid burning and to create a smooth ganache.
- Top and Set: Spread the warm chocolate ganache evenly over the chilled peppermint-frosted brownies. Sprinkle crushed candy cane pieces generously over the top for a festive crunch and flavor.
- Chill to Finish: Return the brownies to the refrigerator and chill for another 30 to 60 minutes to allow the ganache to firm up and set before slicing and serving.
Notes
- You can adjust the peppermint extract amount based on your preference for a stronger or milder mint flavor.
- For easier cutting, chill brownies thoroughly before slicing to prevent the frosting and ganache from smearing.
- Crushed candy canes can be substituted with peppermint bark or other festive toppings for variation.
- Store brownies refrigerated in an airtight container to maintain freshness and keep the frosting and ganache firm.
- These brownies freeze well; thaw in the refrigerator before serving.
