Instructions
- Sauté Vegetables: In a large skillet over medium-high heat, heat the olive oil. Add the diced yellow onion and the strips of red, green, and orange bell peppers. Cook and stir them for about 2-3 minutes until they start to soften and release their aroma.
- Cook Chicken: Add the diced chicken breasts to the skillet with the vegetables. Sprinkle in the fajita seasoning evenly over the chicken and vegetables. Continue cooking for 7-8 minutes, stirring occasionally, until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).
- Add Rice and Liquids: Pour in the Minute rice, tomato sauce, and chicken broth into the skillet. Stir everything together thoroughly to combine all ingredients. Bring the mixture to a gentle simmer.
- Simmer and Absorb: Allow the mixture to simmer for about 2 minutes, then remove the skillet from heat. Cover and let it sit for a few minutes so the rice can absorb the broth fully and become tender.
