Instructions

  1. Combine Ingredients: In a large bowl, mix together the shredded coconut, dulce de leche, sweetened condensed milk, and crushed Nilla Wafers until the mixture is well combined and sticky enough to scoop.
  2. Scoop and Freeze: Line a baking sheet with parchment paper. Using a tablespoon, scoop portions of the mixture onto the parchment in evenly sized mounds. Place the baking sheet in the freezer and freeze the truffles for about 30 minutes to firm up.
  3. Melt Chocolate: Melt the Ghirardelli dark chocolate wafers according to package instructions, typically by microwaving for about 1.5 minutes, stirring every 30 seconds to ensure smooth consistency.
  4. Dip Truffles: Dip the bottom of each frozen truffle into the melted chocolate and place it back on the parchment paper to set.
  5. Decorate: Transfer remaining melted chocolate to a small zip-lock bag, snip off a corner, and drizzle the chocolate over the tops of the truffles for a decorative finish.
