Description

These S’mores Cookie Bars combine the nostalgic flavors of classic s’mores into a deliciously chewy and gooey dessert bar. With a buttery graham cracker and cookie dough base, layers of melted Hershey chocolate and fluffy marshmallow cream, they’re perfect for satisfying your sweet tooth and easy to bake in one pan.

Cookie Dough

  • 1/2 cup softened butter
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 & 1/2 cups all-purpose flour
  • 1/2 cup finely crushed graham crackers (about 3.5 sheets)
  • 1/4 tsp salt
  • 1/4 tsp baking soda

Filling

  • 5 standard Hershey bars, broken into pieces
  • 1 & 1/2 cups marshmallow fluff

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper for easy removal.
  2. Cream Butter and Sugars: In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg followed by the vanilla extract until fully incorporated.
  3. Add Dry Ingredients: Gradually add the all-purpose flour, finely crushed graham crackers, salt, and baking soda to the wet ingredients. Mix gently until just combined to avoid overworking the dough.
  4. Form First Dough Layer: Press half of the cookie dough evenly into the prepared baking pan. Place the pan into the freezer and chill for about 15 minutes to set the dough.
  5. Layer Chocolate and Marshmallow: Remove the pan from the freezer and scatter broken pieces of Hershey chocolate bars evenly over the chilled dough layer. Spread the marshmallow fluff evenly on top of the chocolate layer.
  6. Add Top Dough Layer and Bake: Flip the remaining chilled dough layer over the marshmallow fluff, covering it completely. Bake in the preheated oven for approximately 25 minutes or until the top is golden brown and the cookie bars are cooked through.
  7. Cool and Serve: Allow the cookie bars to cool completely in the pan before slicing into squares to ensure that the layers set properly.

Notes

  • For easier spreading, slightly warm the marshmallow fluff to soften it.
  • Freezing the bottom dough layer helps prevent the layers from mixing during assembly.
  • Use parchment paper to line the pan for easy removal and cleanup.
