Instructions

  1. Cook the Chicken: Season the chicken breasts lightly with salt and pepper. Heat olive oil in a skillet over medium heat, then cook the chicken until golden brown and cooked through to an internal temperature of 165°F. Remove from heat and let rest for 5 minutes.
  2. Slice and Toss Chicken: Slice the rested chicken thinly against the grain for tenderness. Toss the sliced chicken in the sweet chili sauce until fully coated, ensuring each piece is flavorful.
  3. Prepare the Vegetables: Slice the cucumber and bell pepper into thin strips, and julienne the carrot. Shred the lettuce as well, keeping all veggies fresh and crisp for the wrap.
  4. Warm the Tortillas: Heat the tortillas in a dry pan over medium heat or microwave for 10–15 seconds until soft and pliable. This prevents cracking when rolling.
  5. Assemble the Wraps: Lay out the warm tortilla and layer with shredded lettuce, sweet chili coated chicken, and the sliced vegetables. Add optional shredded cheese, avocado slices, and fresh herbs as desired. Finish with a squeeze of lime if using.
