Instructions

- Make cinnamon sugar: In a small bowl, whisk together the brown sugar and ground cinnamon until thoroughly combined. Set this aside for layering later.
- Mix wet ingredients: In a large mixing bowl, whisk the eggs and granulated sugar together until well combined and slightly frothy. Stir in the melted butter and vanilla extract until the mixture is smooth.
- Add dry ingredients: To the wet mixture, add the all-purpose flour, baking powder, baking soda, and salt. Stir gently until just combined; do not overmix. The batter will be thick and somewhat dense.
- Fold in apples: Gently fold the chopped apples into the batter, distributing them evenly but without overworking the mixture.
- Layer the batter and cinnamon sugar: Pour half of the batter into the prepared loaf pan. Sprinkle about three-quarters of the cinnamon sugar mixture evenly over the batter. Carefully spoon the remaining batter on top. Sprinkle the remaining cinnamon sugar over and gently swirl it into the top layer using a knife or spoon to create a marbled effect.
- Bake: Bake for 35 to 45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent the loaf with foil during the last 10 to 15 minutes of baking to prevent burning.
