Ingredients
Scale
Dry Ingredients
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
Wet Ingredients
- 2 large eggs, room temperature
- ½ cup granulated sugar
- ½ cup butter, melted
- 1 teaspoon vanilla extract
Cinnamon Sugar Mixture
- ½ cup brown sugar
- 1 ½ teaspoons ground cinnamon
Fruit
- 2 cups chopped apples (Pink Lady, Gala, Honeycrisp – peeled and chopped, about 2 apples)
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease and flour an 8 x 5 inch loaf pan or line it with parchment paper to prevent sticking and set aside.
- Make Cinnamon Sugar: In a small bowl, whisk together the brown sugar and ground cinnamon until evenly combined; set aside for layering later.
- Mix Wet Ingredients: In a large mixing bowl, whisk the eggs and granulated sugar together until the mixture is well combined and slightly fluffy. Stir in the melted butter and vanilla extract until smooth.
- Add Dry Ingredients: Add the all-purpose flour, baking powder, baking soda, and salt to the wet mixture. Gently fold and mix until just combined; the batter will be thick but should not be overmixed.
- Incorporate Apples: Carefully fold the chopped apples into the batter so they are evenly distributed without breaking them down too much.
- Layer Batter and Cinnamon Sugar: Pour half of the batter into the prepared loaf pan. Sprinkle about three-quarters of the cinnamon sugar mixture evenly over the batter layer.
- Top with Remaining Batter and Cinnamon Sugar: Spread the remaining batter over the cinnamon sugar layer, then sprinkle the rest of the cinnamon sugar on top. Using a knife or spoon, gently swirl the cinnamon sugar into the top batter layer to create a marbled effect.
- Bake the Loaf: Bake in the preheated oven for 35 to 45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean or with just a few moist crumbs. If the top browns too quickly, tent the loaf loosely with aluminum foil for the last 10 to 15 minutes of baking.
- Cool and Serve: Remove the bread from the oven and let it cool completely in the pan before slicing. This ensures clean slices and allows flavors to settle.
Notes
- Store the bread in an airtight container at room temperature for up to 3–4 days to maintain freshness.
- For longer storage, refrigerate the bread for up to a week or freeze for up to 3 months; thaw before serving.
- Reheat slices in the microwave for 20-30 seconds or lightly toast them for a warm, comforting treat.
- To make a vegan version, substitute eggs with flax eggs (1 tablespoon ground flaxseed mixed with 3 tablespoons water per egg) and use plant-based butter.
- You can swap out the apples for other fruits like pears or blueberries for a delicious variation.
