The Perfect Fall Treat Recipe

  • Author: Victor
  • Total Time: 55 minutes
  • Yield: 1 loaf (about 8 slices) 1x
  • Diet: Vegetarian

Description

This moist and flavorful apple cinnamon loaf is the perfect fall treat, combining sweet, spiced layers of cinnamon sugar with juicy chopped apples, all baked into a tender bread. Easy to prepare and ideal for breakfast or a cozy snack.

Ingredients

Scale

Dry Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Wet Ingredients

  • 2 large eggs, room temperature
  • ½ cup granulated sugar
  • ½ cup butter, melted
  • 1 teaspoon vanilla extract

Cinnamon Sugar Mixture

  • ½ cup brown sugar
  • 1 ½ teaspoons ground cinnamon

Fruit

  • 2 cups chopped apples (Pink Lady, Gala, Honeycrisp – peeled and chopped, about 2 apples)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease and flour an 8 x 5 inch loaf pan or line it with parchment paper to prevent sticking and set aside.
  2. Make Cinnamon Sugar: In a small bowl, whisk together the brown sugar and ground cinnamon until evenly combined; set aside for layering later.
  3. Mix Wet Ingredients: In a large mixing bowl, whisk the eggs and granulated sugar together until the mixture is well combined and slightly fluffy. Stir in the melted butter and vanilla extract until smooth.
  4. Add Dry Ingredients: Add the all-purpose flour, baking powder, baking soda, and salt to the wet mixture. Gently fold and mix until just combined; the batter will be thick but should not be overmixed.
  5. Incorporate Apples: Carefully fold the chopped apples into the batter so they are evenly distributed without breaking them down too much.
  6. Layer Batter and Cinnamon Sugar: Pour half of the batter into the prepared loaf pan. Sprinkle about three-quarters of the cinnamon sugar mixture evenly over the batter layer.
  7. Top with Remaining Batter and Cinnamon Sugar: Spread the remaining batter over the cinnamon sugar layer, then sprinkle the rest of the cinnamon sugar on top. Using a knife or spoon, gently swirl the cinnamon sugar into the top batter layer to create a marbled effect.
  8. Bake the Loaf: Bake in the preheated oven for 35 to 45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean or with just a few moist crumbs. If the top browns too quickly, tent the loaf loosely with aluminum foil for the last 10 to 15 minutes of baking.
  9. Cool and Serve: Remove the bread from the oven and let it cool completely in the pan before slicing. This ensures clean slices and allows flavors to settle.

Notes

  • Store the bread in an airtight container at room temperature for up to 3–4 days to maintain freshness.
  • For longer storage, refrigerate the bread for up to a week or freeze for up to 3 months; thaw before serving.
  • Reheat slices in the microwave for 20-30 seconds or lightly toast them for a warm, comforting treat.
  • To make a vegan version, substitute eggs with flax eggs (1 tablespoon ground flaxseed mixed with 3 tablespoons water per egg) and use plant-based butter.
  • You can swap out the apples for other fruits like pears or blueberries for a delicious variation.
