Instructions

  1. Prepare garlic and aromatics: Roast or sauté the minced or whole garlic cloves until fragrant. Optionally, you can also sauté onions or shallots alongside garlic for additional flavor.
  2. Melt butter or heat oil: Warm 2 tablespoons of butter or olive oil in a saucepan over medium-low heat to prepare the base for the sauce.
  3. Add garlic: Add the prepared garlic to the warmed butter or oil and cook for 1–2 minutes until aromatic, taking care not to brown the garlic to avoid bitterness.
  4. Add cream or milk: Slowly pour in ¾ cup of heavy cream, milk, or a plant-based alternative while whisking continuously to incorporate and create a smooth sauce.
  5. Incorporate cheese (optional): Gradually add ¼ cup of grated Parmesan or Pecorino cheese, stirring constantly until the cheese melts and the sauce thickens, enriching the flavor.
  6. Season: Add ½ teaspoon salt, ¼ teaspoon black pepper, and a pinch of nutmeg to taste. Stir in fresh or dried herbs such as thyme, basil, or oregano if desired. Adjust seasoning gradually to your preference.
  7. Blend (optional): For an extra smooth consistency, use an immersion blender to blend the sauce directly in the saucepan until velvety.
