Scale
Base Ingredients
- 4–5 cloves garlic, minced or roasted
- 2 tbsp butter or olive oil
- ¾ cup heavy cream, milk, or plant-based milk
- ¼ cup grated Parmesan or Pecorino cheese (optional)
- ½ tsp salt, or to taste
- ¼ tsp black pepper
- Pinch of nutmeg (optional)
Herbs and Extras (Optional)
- Fresh or dried herbs (thyme, basil, oregano – optional)
- Extra cheesy: mozzarella, fontina, or additional Parmesan (optional)
Vegan Alternatives
- Use almond, oat, or cashew milk instead of dairy
- Omit cheese or use vegan Parmesan cheese
Instructions
- Prepare garlic and aromatics: Roast or sauté the minced or whole garlic cloves until fragrant. Optionally, you can also sauté onions or shallots alongside garlic for additional flavor.
- Melt butter or heat oil: Warm 2 tablespoons of butter or olive oil in a saucepan over medium-low heat to prepare the base for the sauce.
- Add garlic: Add the prepared garlic to the warmed butter or oil and cook for 1–2 minutes until aromatic, taking care not to brown the garlic to avoid bitterness.
- Add cream or milk: Slowly pour in ¾ cup of heavy cream, milk, or a plant-based alternative while whisking continuously to incorporate and create a smooth sauce.
- Incorporate cheese (optional): Gradually add ¼ cup of grated Parmesan or Pecorino cheese, stirring constantly until the cheese melts and the sauce thickens, enriching the flavor.
- Season: Add ½ teaspoon salt, ¼ teaspoon black pepper, and a pinch of nutmeg to taste. Stir in fresh or dried herbs such as thyme, basil, or oregano if desired. Adjust seasoning gradually to your preference.
- Blend (optional): For an extra smooth consistency, use an immersion blender to blend the sauce directly in the saucepan until velvety.
- Adjust consistency: Thin the sauce with additional milk or broth if you prefer a more pourable consistency, or allow it to simmer gently to thicken further if using as a pizza base sauce.
- Use immediately or store: Spread the white garlic sauce on your pizza crust, drizzle over pasta, or refrigerate/freeze in an airtight container for up to 3 days refrigerated or up to 1 month frozen.
Notes
- For a vegan version, substitute dairy milk and cheese with plant-based alternatives.
- Do not brown the garlic to maintain a mild, sweet garlic flavor.
- Add different herbs according to your preference for varied flavor profiles.
- Make sure to whisk continuously when adding cream or milk to prevent curdling.
- The sauce can be refrigerated for up to 3 days and freezes well for up to 1 month.
- If the sauce thickens too much after refrigeration, gently warm and add a splash of milk to loosen it.
- For extra cheesy sauce, add shredded mozzarella or fontina cheese while melting Parmesan.
