Instructions
- Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrots, diced celery, and minced garlic. Cook while stirring occasionally until the vegetables are softened and fragrant, about 5 to 7 minutes.
- Add Main Ingredients: Stir in the canned diced tomatoes (with their juice), vegetable broth, rinsed cannellini beans, small pasta, chopped kale, Italian seasoning, salt, and pepper. Mix everything well to combine.
- Simmer the Soup: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and cover the pot. Let the soup simmer for about 20 minutes, or until the pasta is tender and the flavors have melded together.
Notes
- For a richer flavor, you can add a Parmesan rind while simmering and remove it before serving.
- Use gluten-free pasta if you need to make this gluten-free.
